Deluxe Chili

Deluxe Chili (Award winning chili)

2 pound bag of red beans
2 cloves of garlic chopped
1 clove of garlic chopped extra fine
1 cup grated zucchini squash
3 pounds of very lean hamburger
1 cup of onion chopped
1 cup of onion chopped very fine
2 small jalapeƱos (cut out the spines inside to reduce the heat) chopped very fine
¾ cup green pepper chopped very fine
3 teaspoons of salt
1 teaspoon of pepper
2 tablespoons of honey
4 tablespoons of vinegar
1-48 oz. can of tomato sauce
1 cup of water
4 teaspoons of chili powder
2 teaspoons of oregano
½ teaspoon of cumin seeds
1 tablespoon of Tabasco sauce
2 teaspoons of Cholula Sauce
16 tablespoons or ½ cup of butter or margarine (2 cubes)



Step I
Wash and soak the beans over night.  Then put the beans in a sprouter for 2 days to get the beans to just begin to sprout. Wash the beans about four or five times each day.

Step II
Place the chopped garlic, beans, chopped onion, and zucchini in a 20 qt. electric roaster.  Cover the beans with water before cooking.  Cook at 300oF for 1½ hours or until beans are about halfway cooked.

Step III
Brown the ground beef, finely chopped onion and garlic, jalapeƱos, and green peppers in a frying pan.  Cook until the ground beef is done and the onions and peppers are tender.  Be sure and drain the ground beef mixture before adding it to the beans.

Step IV
Add the rest of the ingredients and simmer until the beans are almost done.  Make the Tabasco Sauce, Cholula Sauce, honey, salt, and black pepper available to use.  As the chili is cooking, add a teaspoon at a time of the seasoning you think you need until the flavor is almost there.

Step V
Set the chili in the refrigerator over night for the flavors to marinate.

 Step VI
The next day, heat up the chili and add the butter or margarine.  Then season with the above 5 seasonings until you have the flavor you desire.  (Flavors might include your favorite hot sauces, salt, pepper, and honey)
